The aroma of dried fruits, nuts, and spices filled the air as guests, including special invitees, rolled up their sleeves to participate in the festive ritual. The highlight of the event was the pouring of liquor, a crucial step in the cake-making process. Brandy, wine and rum were generously added to the mixture, infusing it with a rich flavor.

Speaking about the significance of the occasion, Bisimol Sebastian, the Chief Guest, said, “Cake mixing sets the tone for Christmas. I love the aroma around this event.”

Geetha Somasekharan, the General Manager of Hotel E, shed light on the historical context of the tradition. “In olden days, not everyone had an oven and people used to bring their ingredients for cake making. This was a nice community thing. This tradition remembers that,” she explained.

The mixed ingredients will now be left to mature for several weeks, allowing the flavors to blend and intensify. Ramesh, the Executive Chef shared insights into the preparation process. “We soak this at least two months before we bake. The wine, brandy, and rum give a rich aroma,” he revealed.

As Christmas approaches, these ingredients will be transformed into delectable plum cakes, ready to be enjoyed by guests and patrons of the hotel.
